Deep Dish Pizza

I had a lot of fun trying this out and it works great both ways. I did find that making the dough separately helped it taste more like bread and a thick crust bread but both ways are really good! If you’re thinking this sounds like a lot of work, it is. But is so worth it if you love thick crust pizza this is for you! I mixed both doughs because I knew doubling the fat head dough would be to much refined carbs, so having the cauliflower dough is a nice touch and a great way to get in more fiber.

The two doughs compliment each other in such a way you wouldn’t expect. Deep dish pizza has always been our favorite pizza and I’m excited that we still get to have it!

Don’t forget to poke holes with a fork so it doesn’t puff up:) Also to help it not stick I used some flax seed meal and spread it all on the bottom pan like you would corn meal.

Keto Deep Dish

Ingredients

Cauliflower Dough

  • 1 Head Cauliflower
  • 1 Egg
  • 1 Cup Parmesan

Keto Pig Pizza Dough

Instructions

  • Preheat your oven to 425F.

For The Cauliflower Dough

  • Put the cauliflower through the food processor then heat it in the microwave for 2.5 minutes. Dump it out on your cheese cloth or thin dish towel and let cool while you start the fat head dough. You will drain and wring out all that water from the cauliflower once it cools! Then add in your egg and parmesan and mix and set aside.

Keto Pig Pizza Dough

  • Heat mozzarella and cream cheese in a microwave safe bowl 30 second intervals stirring until melted. Add in the parmesan and Italian spices, salt and pepper, garlic and onion powder and mix it up.
  • Add in the eggs one at a time stirring in between. Add in both coconut flour and almond flour mixing all the ingredients well.
  • Finally combine BOTH doughs together!
  • When you're done, you'll have one big pizza dough that's perfect for a deep dish style pizza. Crust will cook for 20-25 minutes.
  • Take out and add all the toppings that your heart desires and put it back in for about 15-20 minutes at the same temperature.

The Missing Ingredient for Amazing Keto Bread

If you’re like me, you came to the keto world with a terrible carb addiction and every meal was bread. Sandwich bread, pizza crust, or even just my terrible tempting nemesis… Toast. Like you I’m sure, I tried every keto-friendly bread recipe I could find. So many of these look like fluffy loaves of bread, but they all we’re missing something in either the taste or texture departments, sometimes both. Or worse, their main constituent ingredient was whipped eggs, and the result was basically an omelette loaf.

The good news after trying so many recipes, I found one recipe that was almost the one… It was just missing a final ingredient to give it everything you need for mouth watering keto french toast, sandwiches and so much more. It’s become a staple part of our keto diet here and I know when you give it a try you’ll find baking in your oven regularly too! The magic ingredient is sour cream. It gives your bread a smooth texture, kicks the taste up a notch in complexity and keeps the texture from being crumbly. The whole loaf of bread comes out to 12 grams of carbohydrates, that’s lower than 1 slice of store bought bread.

  • Pre heat oven to 350F 
  • Separate the eggs and whip up the whites with the cream of tarter and set aside. 
  • Then add all your dry ingredients to your egg yolks and all other wet ingredients and mix. 
  • Add that mix to your egg whites and blend together.  
  • Pour your mixture in your bread pan and bake @ 350F for 50-55 minutes and check with toothpick.

Notes

My bread pan was to big 9x5x3 but it still came out great so don't worry how big your pan is.

I wanted to note that in this recipe I used blanched almonds.

Low Carb Syrup

This low carb syrup is on the low glycemic index, keto approved and taste amazing! All you need is two ingredients. If you want it more sweet then just add powdered sweetener. The glycemic index for vita fiber is at 35 and 1 teaspoon of the vita fiber is only 1 net carb (0 sugars). Compared to natural unrefined honey which is any where from 35-45 or higher on the glycemic index depending on what those bees ate. That’s not even mentioning the net carbs which is 7 net carbs (sugar and or fructose) per teaspoon!

I’m not trying to make honey out to be the bad guy here. Honey has lot’s of health benefits too just not any that contribute to healthy insulin levels.

1 Tbsp Organic Pure Maple

1 Tsp Lakanto Monkfruit (Optional)

Ice Cream Cheese Cake

For the crust you will need

1 cup Almond flour

2 tbsp Cinnamon

1 tsp Nutmeg

3 tbsp Butter

1.5 tbsp Erythritol

For the ice cream cake you will need

1 cup Heavy cream

1 Brick cream cheese (250g)

1 tbsp Vanilla

1/3 cup Swerve sweetener (I do 5 tbsp of swerve because I found the recipe was to sweet)

Directions

Make the crust first than set aside. Blend heavy cream until you reach soft peaks than mix in cream cheese, vanilla and sweetener and mix well. Take your crust and put it in a spring pan (I used a 9 inch spring pan) and flatten it out. Than add the mixture to the pan and spread it evenly. Shave some dark chocolate on top! So good and only 5.6 grams of carbohydrates a serving. I put part of the crust on top as you see in picture but when making it again it was much better with shaved chocolate on top. Put in freezer for 3-4 hours and enjoy!

Keto Coffee Cake

Coffee cake has always been a favorite of mine. I’ve had so much fun making it keto friendly. I have tried two other coffee cake recipes and I found that it was good but it was not coffee cake. What I want in coffee cake is subtle but sweet and moist yet with a crumble top. I like the crumble top and bread like feel that goes perfect with a cup of joe or hot tea.   • Preheat oven at 350 degrees. Make the topping mix and set aside.
  • Mix the dry ingredients well. Add the dry to the wet ingredients and mix. Take half of the batter mix and put it in your baking dish and add half of the topping mix to it, then add the rest of the batter mix.
  • At last put the rest of the topping on it and swirl it around with a toothpick. Bake for 30 minutes.

Whats awesome about this recipe is that you can mix it up how you want. You can make different flavors of bread, cheesy mug bread, garlic mug bread, even sweet cake mug cakes! Whatever tickles fancy.

  • Mix ingredients in mug, than put in microwave for 90 seconds. That's it, turn it into PBandJ,  ham and cheese, BLT, turkey lettuce bacon and cheese, vegan style or even little pizza's.

Notes

To make things sweet just add your no sugar sweetener mix, some vanilla and you’ve got yourself the perfect keto mug cake. If you’re looking for the perfect mug cup here is a really cute one!

Welcome to my food blog! I will be cooking, baking and sharing what I’ve learned with all of you. I love food as I’m sure you do too. I can’t help myself but to make keto foods. What I mean by that, is because of agriculture we have conventional farming and more processed food like substances. If you are over weight or have some specific health problem, for some reason doctors will tell you to reduce your FAT intake. Really?!

Crazy, I know and to think that insulin has the biggest role in weight loss and or weight gain not to mention hundreds of health issues. If you have high “insulin” without a doubt you have high inflammation in the body. Inflammation is the leading cause of most if not all health issues/diseases out there today.

It matters what you eat and your body will tell you through pain, fatigue, brain fog, cravings are mainly caused by missing nutrients. So do your research on it, the research that we never had the opportunity to learn in school.

Ingredients

  • 2 Cups Parmesan/Cheddar Cheese Shredded
  • Dash Spices

Instructions

  • I can't believe how easy it is to put parmesan and other cheeses whatever you like mix em up with whatever seasonings you like. Make different flavors of cheese crackers.
  • If you don't have parmesan than use some nutritional yeast and almond flour to help it not be so oily and more like a cracker. Depending how much cheese you're using, you will not need much parmesan, nutritional yeast and or almond flour.
  • Broil them and keep a close eye on em as they will bubble and burn fast if you're not careful. Make a great substitute for taco shells to. Do not let them cool on the pan!

Everything and Anything is Possible with Keto

I was shopping at the grocery store and as I was checking out, I started talking with the clerk, telling her about Lily’s chocolates that they are the best taste and low carb wise with no sugar! Anyhow she seemed amazed by that and she said so you’re doing low carb uh? I said yes! I’m so excited to tell everyone about this high fat diet because I myself only stubbled upon it. I told her about MCT oil and to look up Ketogenic diet on Siri or google will give you the short version but then don’t stop there! I said, that today, yes today I’m another pound down without even trying! 26lbs down!
I don’t work out in the gym, I’m not killing myself calorie counting and starving myself in the process. I don’t need to calorie count. The lady behind me, looked at the bottle of MTC oil and said 125 calories for a tablespoon like it was a bad thing. I told her I don’t need to calorie count because I eat less without even trying, The FAT is key in switching your body over to burn fat (ketones) instead of carbohydrates/sugar (glycogen).
Burn Fat all day Instead of carbohydrates! Once you become keto adaptive you will burn your own stored up fat and just like that your weight is falling off and even if you don’t need to lose weight you will be creating a health positive cycle of lowering inflammation!
Low carb, high fat diet the ketogenic diet does exactly that, better than tumeric root, better than ginger root. What causes inflammation? Insulin, high insulin is what causes inflammation in your body, basically your body is sending out firefighters (inflammation) to go and put the fire out!
You know what put’s the fire out? Low insulin. How to do that? Go longer without eating! Eat nutrient dense foods with lots of fat. The fat keeps you going longer without eating with NO stress to the body. When you do eat, pig out keto style and lose weight and achieve complete health. Weather you want to gain weight or loss it.
Don’t forget what causes high insulin, refined carbohydrates!

  • Bake at 350F for 10 minutes or until brown
  • Mix all of the seasonings with the almond flour then put in a pan and mix with the cheeses on medium low until it forms a dough. Roll it out as thin as you like it and the time will vary depending on how thin you have it.

  • Bake for 9-20 minutes at 350F
  • Put all ingredients in a pot over medium heat and stir until forms a dough. Roll it out as thin as you want, the thicker it is the more it will be like flat bread, which isn't bad either. I wasn't sure if it would melt as it baked so I left room around them just to make sure and as you can see they were fine, so put them as close as you can to fit more on.
  • If you want it even more crispy broil make sure to keep an eye on it! I have yet to try frying them, and not sure if that would work,  just remember the thinner they are the faster they cook!

The fathead cheesy bread that comes with a twist so mix it up and do as you wish! This little piece of heaven is better then any other stuffed bread I’ve ever had.

  • Directions
  • To make the dough, heat the cheese and almond flour in a pan (you do not need a double boiler) to medium heat and stir until it forms a dough like substance, then place the dough on parchment paper, you will also need a piece for the top too. Then roll it out how you like. Add all your favorite ingredients. After you roll it up with all your favorite goodies, butter the top and add some spices that you like!
  • For the filling you can make it up as you go, I used onions, broccoli, bacon, parmesan cheese and for the seasonings on top I used a sprinkle of garlic, pepper, basil, paprika, parmesan and there you have it! Cook 25 minutes at 350 degrees
